Summer Treat

It is very hard to find fresh fruit and produce in Alaska. Every time I want to bake or cook, it is always gamble when buying fresh fruit.

Since it’s summertime, I have been in the mood for some fruity type of desert. While I was in Costco a couple of days ago, I found peaches that were perfect! I just had to buy them. There are not a lot of opportunities to buy perfect peaches.

Since I bought the box of peaches from Costco, there were just too many for one person to eat. I have been looking for a recipe that used peaches and I stumbled upon a peach cookie while on Pinterest. These cookies melt in your mouth and are a delicious summer dessert.

Ingredients

Vegetarian

Produce

  • 1 cup Peaches

Refrigerated

  • 1 Egg, large

Baking & Spices

  • 2 3/4 cups All-purpose flour, UNBLEACHED
  • 1/2 tsp Baking soda
  • 1/2 tsp Cream of tartar
  • 1/2 cup Granulated sugar
  • 1/2 cup Powdered sugar
  • 1/2 tsp Salt
  • 1/2 tsp Vanilla

Oils & Vinegars

  • 1/2 cup Canola or vegetable oil

Dairy

  • 1/2 cup Butter, unsalted
