It’s Noodle Time!

One thing I love to do is have a date night every week with my guy. We love to make dinner, sit down together, reconnect, and have a glass of wine after a long week. Last weekend for our date night dinner, we decided to make homemade spaghetti noodles and homemade marinara sauce.

First I made the noodle dough. It was a simple recipe with only a few ingredients.

Homemade Spaghetti Noodle Recipe

4 eggs

2 – 2 ½ cups of flour

¼ teaspoon of salt

Put all the ingredients into the Kitchenaid Mixer and mix it all together. Then let the dough rest for 20 minutes.

After the dough has time to rest, cut the dough into four sections and cover them with flour.

Put each section of dough through the noodle attachment till flattened. Once the dough is flattened, cut the dough into thin slices until they look like noodles.

Put the noodles in a bowl and flour them so they don’t stick to each other. Put the bowl aside.

After making the sauce, boil the noodles in water for 5-8 minutes.

Top it off with Sauce

My favorite way to make homemade marinara sauce is with fresh heirloom tomatoes from the garden.

Preheat the oven to 425 degrees, slice up tomatoes and place on a cookie sheet. Add garlic, olive oil, onion, and sprinkle salt and pepper. Roast the tomatoes for 45-60 minutes.

Place on stove and let simmer for 5-6 minutes.

Put the tomatoes in blender and blend till it looks like sauce. You may have more than you want, so you can freeze the rest and save it for later!

Marinara Sauce Ingredients

5 heirloom tomatoes

2 cloves of garlic

½ cup extra virgin olive oil

1 medium onions roughly chopped

1 tablespoon kosher salt or sea salt

2 teaspoons ground black pepper

Place spaghetti on plate with as much sauce as you want. Top the meal off with a nice glass of red wine!
